Fish Head Art

When eating fish, most people would just eat the middle portion between the head and the tail. Some people, however, also like the head...especially the eyes. I have a friend who would even go to the extent of cracking open the fish skull to pick out the brains...!!

So let's say you buy some fish but you just want to cook fish fillet...now what can you do with the discarded fish heads?
